What do you do when it's just you and the wee ones (be it one or more) at home for dinner?

We probably have one or two nights a week where its just DD and I and I struggle of thinking up effortless, not so messy, small and healthy dinners.

Tonight might be cornfritters and a salad I think (last night may have been takeaways ekkk) but what do others do when you don't require a family meal?

Toasted sandwiches
Baked Beans & toast
Any leftovers that have been chucked in the freezer e.g. spag bog

We do the same as others

Eggs
baked beans/spaghetti
soup - i always have some in the freezer
toasties

We normally have one easy meal a week like this so i dont have to cook. Well cook a large meal anyway. I tend to leave the easy meal night until i know DP will be late home, so he can then just make his when he gets home.

we just usually have steamed veges, meat of some sort or frozen fish, or whip up a pasta.

I just do a quick vegetable and rice stir-fry or little quiches made in my silicon muffin tray. Sweetcorn fritters are a fav for me and DD too!!

Toasted sammies, vegies and couscous, soup, pasta, left overs, baked beans/spaghetti, eggs, omlettes are great... We love cornfritters too! You could also do breadcases with whatever filling inside (just like muffins but you put the bread in the muffin tray and fill the inside and top with cheese (if you wish)). Or stuffed potatoes!

DD and I are on our own for the next couple of months with Dh away, we are giving BLW a go and I tend to have breakfast and lunch together with her, and give her a light dinner either fruit or veges.

ah, well see my child doesnt eat so he gets whatever food it is he will eat this week (smoked salmon, apple, rice crackers and cheerio sausages atm) and I have a frittata

omelettes are great , and as high9 said- bread cases! we have these when its just me and dd , i like egg, bacon and cheese ones best but you can cuck anything in them really , my sister makes some with mince and there not bad either , and  maybe just grab a couple of small packs of meat/chicken/fish in your grocerys (enough for you and your dd) if you do feel like something a bit more sabstantial but dont want to make a big meal , its not to hard to put some vegies in a pot and some meat in the oven and that way you wont be wasting any .

I always have some left over soup frozen to have with toast, scrambled eggs or spaghetti and toast, 2 min noodles, nuggets and fries for the kids and a heat up frozen meal for me, or I split a heat up frozen meal (mac cheese or sheperds pie) for the kids and I have one too.

Lamb or chicken strips, homemade fries and frozen vegies. Easy and relatively healthy.

TBH I don't find it too hard just sticking a casserole on - as we get leftovers, so I freeze the extra portions (Dh's 1 portion!) and that's usually enough for myself and the kids for lunch another day. I've been on my own until recently and would only cook half the week, just in double doses. I'd have enough in my freezer to rotate different meals each night but with half the cooking. Easy peasy :)

We do things like,

sweetcorn fritters
Baked beans and toast
toasted sammies
Cheerio Sausages


The kids like this tinned mac cheese by watties, I think its foul lol but they like it!

My kids are FUSSY dinner time eaters so some nights they might just have a sammie and fruit!

Tonight I made a yummy chicken stirfry and they refused to eat it

I do the same as Emz, my DH works away 2 weeks at a time so I cook the same sized meals but that usually does DS and I for at least one other dinner (sometimes 2) so in the 2 weeks he's been away I've only had to cook about 4-5 times or if I can't be bothered we have chicken nuggets, chips + veges or spag/beans on toast etc.
