I don't know if it's just a stay at home mum thing or just a mum thing or a boredom thing. But I am rather addicted to making cupcakes myself.
Who else is an baking addict?
...oh and it's not helping my weight loss either, as I like to sample my work...a few times LOL!

My speciality is banana/choc cake, and these awesome cookies almost like cookie time cookies... was SO gutted when diagnosed with gest diabetes, but DP was more so because I refused to bake anything if I couldnt have it too!
Have lots of bananas stored in the freezer ready to be used, so I'm going to get my bake on once I can get around the kitchen a little easier!
Goes without saying that DP cant wait lol!

I've found the best hokey pokey biscuits, YUM! and they are egg free so friendly for preggos to eat raw ;) hahahaha...
In fact, I'm off to make some now!!
Also going to try and find something else to bake.... Any suggestions???

I've always loved baking now I'm home I bake more but tend to stick to muffins, biscuits and slices with a short cooking time as I don't know how long I've got before Little Miss is up again.
Can't wait till she's old enough to help me.
My favourite recipes are fudgey chocolate chip cookies, fudge cake and banana chocolate chip muffins. I've made a couple of batches of lactation cookies as well they're yummie and good for bf so no need to feel guilty.

mm i love baking, i often do macadamia and white chocolate cookies yum yum the only problem is that then i have to eat them!!!
my issue is that i love baking but its just me and DH and he doesnt really eat much sweet stuff so i end up throwing cakes away or eating them all myself which is not so good for my hips!! cant wait till i have kids to help me make and eat them!

Im just making some good old fashioned cinnamon swirls for my girls, like to sprinkle them with pears or apples and raisins - drizzled with vanilla icing - yum! for the girls of course

I bake once or twice a week. Sometimes more if there is nothing sweet ill make a batch of choc chip cookies
I make muffins etc and freeze for dps lunch. Also loafs etc. Sunday lunch is normally scones or savoury muffins of some sort

I have pretty much stopped baking becuase of dieting, I can't have tempting things in the house. Even homemade bread is out the window.

Hmm I love baking but like a couple of you I can't have baking in the house as I'll eat it and I really don't need it!
Mmmm those fudgy choc chip biscuits sound yum! A couple of my favourites to bake are fudgy banana choc chip muffins, honey biscuits and chocolate cake.
Have to do some baking this afternoon for DS's kindy as they are holding a bake sale to raise money for Chch kindys. Think I'll go with cupcakes, they are easy and I shouldn't have too many left over!

I actually baked more before DD... I've baked maybe 3 cakes, 2 lots of cookies and 3 lots of muffins in the year she's been born! I used to bake a cake a month, cookies once or twice a month and same with muffins...
I bet Sophie is loving all the baking! Was one of my fave things as a kid!

Actually speaking of eggless recipes, the last 2 pic's of cupcakes, they are eggless cupcakes and also butterless, though the icing is buttercream icing and out of all the chocolate cupcakes I've made, the eggless recipe is actually the tastiest.

Fudgey Chocolate Chip Cookies
175grms melted butter
1 cup brown sugar
1/4 cup white sugar
1 teaspoon vanilla
1 egg
2 cups plain flour
1/2 tsp each baking soda, salt
1 1/2 cups chocolate chips
Beat together cooled melted butter and sugars, vanilla and egg. Mix in the flour, baking soda, salt and chocolate chips .
Place large spoonfuls on to greased trays and bake for 12 minutes, cool on trays then transfer to wire racks.
They come out slightly under done., which makes them chewy once they're cool.

Hokey Pokey biscuits
1 tbsp golden syrup
2 tbsp milk
1tsp baking soda
125g butter
1/2 cup sugar
1 1/2 cups flour, sifted
3/4 cup choc chips
Pre heat oven to 180 Degrees, line oven tray with baking paper
Put golden syrup and milk in a small saucepan. Heat, stirring until golden syrup melts. Remove from heat and stir in baking soda. Leave to cool.
Beat together butter and sugar until light and fluffy. Stir in golden syrup mixture. Add flour and choc bits and mix well.
Roll heaped teaspoons of mixture into balls and put on oven tray. Press down lightly with a fork. Bake for 10-15mins until golden brown
You probably dont HAVE to add the choc chips, but I do ;) I think they are way yummier! I got the recipe out of a kiddies magazine, and it was a nestle ad, so I'm guessing they had to add the choc chips so there was at least one nestle product in there

Yeah we always have choc chips in the cupboard for those times when I need chocolate cake (3 min mug cake, mmmm)

If you want the eggless version of chocolate cupcakes, here it is:
Eggless Chocolate Cupcakes
1 1/2 C Flour
1 C Sugar
1 tspn Baking Soda
1 tspn Salt
1/3 C Cocoa
1/2 C Oil
1 C Water
1 tspn Vanilla Essence
1 Tbspn Vinegar
Mix, then bake for 20-25mins 180 degrees
Buttercream Icing
2 C Icing Sugar
85g Butter
2 Tbspns Milk(though I use cream)
1 tspn Vanilla Essence
chocolate flavour just add 1/2 C Cocoa

Here's a really awesome one I've tasted, but not made.
Caramel Savannah
Rooibos-Chocolate Cupcakes with Caramel Buttercream
Makes about two dozen large cupcakes
2 Tablespoons loose leaf rooibos tea (I used leafs infused with caramel)
1 cup boiling water
1/2 cup cocoa powder
1 teaspoon vanilla extract
1/2 cup vegetable oil
4 eggs, yolks and whites separated
1 cup sugar
1/2 cup brown sugar
1 2/3 cups plain flour
1 Tablespoon baking powder
1/4 teaspoon salt
1) Heat your oven to 350C. In a small bowl, whisk together the flour, baking powder, and salt and set aside.
2) Take your boiling water off the stove and toss the loose leaf tea in it. Let it sit for about 15 minutes. While you're letting the tea steep, mix the cocoa powder, vanilla, and oil in a small bowl and set aside. When the tea is done steeping, put the liquid through a strainer a couple of times to remove all the leaves and set aside.
3) In a large bowl, beat the egg yolks and sugars together with an electric mixer. Spoon the cocoa mixture into the sugar and mix until fully incorporated. Next, pour in the tea and mix slowly until fully incorporated. Finally, slowly mix in the flour mixture.
4) Take the left over egg whites and (with a pinch of salt or cream of tartar) and whip up until it forms soft peaks. Slowly fold the egg whites into your batter.
5) Spoon the batter into cupcake liners and bake for about 20 minutes or until your cake tester comes out clean. Leave out to cool before icing.
Caramel Buttercream
1/4 cup + 2 Tablespoons of sugar
3 Tablespoons of water
1/4 cup + 2 Tablespoons heavy cream
1 teaspoon loose leaf rooibos tea
1 1/2 teaspoons vanilla extract
1 1/2 cups butter
2 cups powdered sugar
1) In a glass measuring cup, pour in your heavy cream and microwave it for about 20 seconds. After warming it, mix in your loose leaf tea and let steep for about 15 minutes. Strain out the leaves after the tea is finished and add the vanilla to the flavoured cream. Set aside.
2) In a small pan whisk together the sugar and water. Leave at a boil (without stirring) until it begins to turn an amber colour (the time on this varies, depending on the size of the pot and the temperature of your stove top. Just watch it like an eagle and take the pan off as soon as you see a bit of colour). When your pan is off the heat, quickly mix in your heavy cream mixture, scraping the sides and bottom.
3) In a large mixing bowl, cream together the butter and slowly add the powder sugar with an electric mixer. When the sugar is fully incorporated, slowly pour the caramel into the bowl and mix together with an electric mixer. Use the frosting as soon as possible.

oooh this thread is so good! i love baking, going to try those yummy hokey pokey biscuits too cos i made a lemon drizzle cake yesterday (recipe i stole a while ago from on here) and i couldn't lick the bowl.. i could just smell the sweet sugary goodness too!
DH doesn't like baked food so i do end up eating it all myself, i only have half the cake left but for now at least i can say the baby is sharing it with me

Hee hee, thanks! It seems you are winning on the cupcake talent front though.
They were good. Words of advice though: I couldn't really taste the tea, and I could have cooked the caramel a tiny bit longer to give it a deeper flavour. They came out a wee bit on the small side, but that's only because I'm used to making big muffin-sized cupcakes!
I like baking sometimes. Usually I see a recipe I like and then want to make it. I don't usually feel in the mood for baking unless I've been inspired by something. And now the dishwasher's broken and I have to wash all the dishes (why are there always so many?) by hand so I'm less keen.
Red velvet cupcakes are always a winner too! With cream cheese icing, yummmm.

The hokey pokey recipe doesn't make a heap, but each time I've tried doubling it, it hasn't worked for me.
Also makes even less cos it's quite a dry recipe, and easy to eat, so probably only about half of it gets cooked

Mmmm baking. I just did a whole bunch on tuesday after my oven was fixed. We wer baking-less for 5 days.
My favourite thing to bake is brownie, and it tastes sooo good.

I am so addicted to baking, its not funny! We have a cake auction at church on sunday and I have been thinking non-stop for the past week about what I am going to make and its driving me nuts- the options are so endless!
I'm in love with making bread too- i found a fantastic bread book and make some kind of bread once a week. Last saturday I made 2 plaits and a batch of cinnamon buns. mmm... cinnamon buns.
For me I find it so satisfying because I love doing things with my hands and with baking there is a definite beginning and end to it- unlike many other crafts :)

I have to raise my hand as another bake-a-holic find it a great stress reliever (as my old workmates can attest to when I was going through my marriage breakup!). These days I try to stick to things I can freeze so I don't feel the need to eat it all straight away to save it 'going off' - a recent favourite is Crunchy Lemon Muffins, though today I made a close runner-up, Cream Cheese & Strawberry Muffins.

Yay! I'm glad you liked them I discovered under cooking them a wee bit makes them a bit chewy and really nice, but I haven't perfected this yet. I think I cook them for about 8-10mins

Mmmmm DS and i made the hokey pokey biscuits last night, they are so good. I did find the mixture a little dry though and didn't get a lot of the hokey pokey flavour through, next time I think I'll add and extra tablespoon of golden syrup.

DD and I have our fudgey choc chip cookies in the oven now am baking them at 180deg, hope that's right!! DD liked the raw mixture LOL, I went out to check if there was a temperature on the recipe, came back and cheeky monkey had the spatula in her mouth wish I could do that but resisted because of the raw egg!
Still got some mixture left so will do a batch of mini ones once the current batch has finished. Yum yum yum!

They are pretty delicious!!
I just used a standard round plastic nozzle, but I cut it so it was about 1cm in diameter and I just swirled in a circle starting on the outside and finishing in the middle and squeezed the bag hard so lots of icing came out...

I am absolutely addicted to baking - I can't stop myself but I don't even want to eat it half the time, just do the baking!
I've just posted a caramel slice recipe in the recipe section, it is SO good and so so simple to make!
I got the latest Foodtown magazine yesterday which has so many recipes in it (including the caramel slice one) and I went out today and bought ingredients for 6 different recipes

If anyone has spotty bananas to use I've made this yummy banana/coconut cake twice in the last week.
INGREDIENTS
CAKE:
1 cup desiccated coconut
1 cup castor sugar
1 1/2 cup self raising flour
1 cup mashed banana
1 cup coconut milk
1 egg
1 teaspoon of vanilla extract
ICING:
100g dark chocolate melts
1/4 cup cream
METHOD
Grease and line a square slice tin, and preheat your oven to fanbake 150 degrees Celcius.
In a large bowl combine dry ingredients.
Mash your banana and combine with the rest of the wet ingredients in a separate bowl.
Pour wet mixture over dry mixture and mix until combined (it will look a little lumpy due to the chunks of banana and the coconut).
Place batter in your prepared tin and cook for about 50 minutes to 1 hour until your loaf is lightly browned and a skewer inserted in the centre comes out clean.
Allow to cool in pan for 10 minutes and then turn out onto a wire rack to cool completely.
Microwave chocolate melts and cream together for 1 1/2 minutes then spread over cake.
This will apparently keep well for about a week in an airtight container though it hasn't lasted long enough to prove this (I kept mine in the fridge because of the icing).

I made the yummiest Banana Cake with Cream Cheese icing last night! Who knew it takes 50 mins to bake though! I didn't!

I just use piping bags, with different nozzles. Have used the 2 star looking nozzles so far.

bumping this up to show my easter surprise muffins hehe, the surprise being a mini caramello egg inside each one
Anf course i had to try them out, perfect with icecream while warm!

Haven't posted anything in here for a while.

In the 2nd pic, I had too muc icing left over and didn't want to waste, so went a bit overkill on some of the icing LOL!

Hi,
I'm a newbie to the forums and still TTC number 1, but I love baking too!
My last session was a greek yoghurt choc cake from the Taste mag that came with this month's Next, and a chocolate zucchini cake, a recipe I found on the net.
I gave the yoghurt cake to a friend with a newborn and hubby has been devouring the zucchini cake, although he didn't know about the zucchini until he'd eaten a big slice.
Also a dabhand at choc chip cookies (Allyson Gofton Bake book) and good old Edmonds banana cake.
But I've piled on the kgs already this winter so need to stop sampling my wares!
