made some gingerbread men today for DP's work to have tomorrow.
I used bowie's recipe:
* 150g butter, softened
* ¼ packed cup soft brown sugar
* 3 tablespoons golden syrup
* 1 teaspoon baking soda
* 1½ teaspoons boiling water
* 2¼ cups plain flour
* 3 teaspoons ground ginger
* 1 teaspoon each cinnamon and allspice
It makes quite a dry mixture and you have to work it with your hands quite a bit to soften it up. They're also quite hard, european style i guess. They'd be good if you punched a hole in the top before cooking and threaded them with ribbon. They just take about 10min in a 150 degree oven, just long enough to get some colour. They come out really soft but harden up as they cool.
the santa's do kinda look a bit creepy.
the circle and solid red stars are the trail ones we get to eat tonight

normal icing.
only kind i know how to make.
a little butter, boiling water, icing sugar until its the right consistency then add food colouring

They look great. I just bought a piping bag so want to make some this week. I took DS out shopping for a gingerbread man cutter but he was insistent we buy a teddy bear shape instead. Oh well.
How many gingerbread men would you get from that batch?

They are so cute! I love the santas! going to copy that idea!
I make some that are quite soft for my boy if your interested in a different recipe? I use the writing icing kit to decorate them they look really neat!
Boil together 3T golden syrup, 75g sugar, 1 T water, 1 t cinnamon, 1 t mixed spice, 1 t ginger. Then remove from heat, add 75g butter and 1/2 t baking soda. It will froth up a bit and then you add 225g flour. Stir and knead into a ball, its really easy to use

yes that was all one batch.
i think it would have made 12 gingerbread men had i not made the smaller shapes.
all depends on how thin you roll it out.
i rolled it to about 3mm
i think i didnt cook them long enough as they are still soft, never went rock hard.

That was a bit confusing, i read that and was like "wow, Mucky Tiger talks like me!" then realised it was me
I rolled mine to about 5mm, big fat gingerbread. And the second time i cooked them less and they were softer and more delicious in my opinion because i like soft cookies, not solid ones.
I have since tried this with gluten-free flour and it works, a minor miracle since nothing gluten free is easy. They're wickedly fragile when soft from the oven though so handle with care. Just in case anyone wants to get their gluten-free bake on. I used the simple baking mix.
What i actually came to say is - AWESOME gingerbread men - and where did you get the snowman cutter from? They look fantastic!

that was in a set of 4 cutters i got given last xmas.
it has a snowman, bell, star and a holly shape.
they were from H and J smiths which is just a department store like arthur Barnett (not sure what you have where you live)
