Hi everyone,

I want to make some biscuits for a group of people tomorrow and am after a fail-proof recipe. The catch is, they can't have any chocolate in them as one of my friends is allergic to chocolate (shocking, I know!)

Anyone got a good recipe?

This one is kinda like shrewsburys in taste, but really easy to make. You can use any jam you like, or sometimes I use a frozen berry of sorts in each biscuit instead of jam. Hope you like it

Jam Drops

80 g butter
1/3 c caster sugar
2 tablespoons milk
1/2 teaspoon vanilla essence
1 c self-raising flour
1/3 c custard powder
2 tablespoons raspberry jam

Preheat oven to 180*C. Line a biscuit tray with baking paper. Beat butter and sugar until light and creamy. Add milk and vanilla, beat until combined. Add sifted flour and custard powder and mix to form a soft dough. Roll two teaspoons of mixture into balls and place on prepared tray. Make an indentation in each ball and fill with a 1/4 teaspoon jam. Bake for 15 minutes. Transfer to a wire rack to cool.

Hiya

This is obviously too late for your guests (but thought I'd post it anyway), but one that I've always enjoyed, is quick and easy to make and doesn't need to be baked! To be stored in the freezer afterwards.

Cherry Truffles or Squares

1 packet wine biscuits, crumbed
2 cups coconut
12-20 glace cherries
100g butter, melted
1/2-1 teaspoon almond essence
3/4 cup (1/2 tin) sweetened condensed milk
1-3 Tablespoons sherry, brandy or kirsch
(NB: I use vanilla essence instead)

Crumb biscuits. Add coconut, cherries and melted butter, then the essence and condensed milk. Mix well, adding enough liquid to form a workable dough.

Roll into balls or press into tin, 2cm thick. Place in the freezer and when cold cut into sqaures.

If you don't have cherries to hand, you could probably substitute it with chopped dried apricots or figs, as a suggestion.
