Ok, so everytime I am invited around for a potluck dinner, or Christmas, I always get asked to make my pasta salad. Great at this time of year, so here it is ladies. Yum.

Tara's Famous Pasta Salad

- 375g Shell Pasta
- 6 Bacon Rashers
- 1 1/2 cup Mayonnaise (I use Real Foods)
- 1/3 cup Wholegrain Mayonnaise (or any seeded mustard)
- 3/4 cup Buttermilk (can just use more Mayo instead)
- 3 trimmed Celery Sticks, thinly sliced
- 1 large Red Capsicum, chopped finely
- 1 bunch Fresh Chives, chopped finely
- 2 tablespoons Flat Leaf Parsley, chopped finely

(The great thing about these ingredients, is that they can be chopped and changed to suit your taste)

Cook pasta in a large pan of boiling water, uncovered, until just tender. Cool.

Meanwhile, remove and discard rind from bacon then cut into small pieces. Cook bacon, stirring in a medium pan until brown and crisp. Drain on paper towels.

Whisk mayonnaise, wholegrain mustard and buttermilk in a large bowl. Add pasta, bacon and remaining ingredients to bowl. Toss gently to combine.

Chill before serving.

Makes quite a bit.

I am exactly the same. I am all for new ideas of getting vegies into my DF! And he likes all the creative lil salads that I try out. But that one, is his favourite.

I get my buttermilk from Countdown. It's near the milk and chilled section. It's white and orange on the carton if I remember rightly.

I couldn't find it once, so just added more mayo and mustard, and it was still brill.

Just don't overcook the pasta!
