The other thing about sushi is if it is made correctly with the Japanese rice wine vinegar it doesn't grow bacteria at all as the acidity inhibits the growth. That's why sushi doesn't have to be refridgerated. It would be pretty hard to tell from the sushi itself but if the sushi makers are Japanese there's a good chance it has been prepared correctly.
Having said that I just make my own if I want some.
