I have been making the choc chip bikkies from Edmonds (didn't they used to be called kiwi crisps??) but keep feeling a bit disappointed with the results..they seem kinda dry.
Anyway was hoping someone would have a good recipe for a nice chewy choc chip coz I love those kind more than crunchy!
have you tried the one thats like the cookie time cookies???
225g butter
3/4cup white sugar
3/4cup brown sugar
1tsp vanilla essence
2eggs
2&1/2cups flour
1/2tsp salt
1tsp baking soda
1 cup choc chips
cream together butter and sugars until light and fluffy. add vanilla eggs 1 at a time. Mix together dry ingredients except choc chips and add to butter. Stir. Add choc. Stir. Place large spoonfuls onto prepared trays leaving heaps of room for spreading. Bake at 180c for 15minutes
it makes about 24ish and they can spread out quite a bit so you might find you can only do about 9 or so at a time.
The recipe I use to make chocolate chip cookies - I reduce the cooking time to around 10 minutes that way they come out slightly underdone and when they cool they're perfect - chewy on the inside and crunchie on the outside.
