I swear by the Jamie Oliver cookies recipe in his Ministry of Food Cookbook. It is fantastic. You freeze the dough for half and hour - before cutting into cookies and baking.... But you could leave it in the freezer overnight (it does have an egg in in - so perhaps you could leave it for a week at the most) and chuck it in the oven for fresh & quick cookies in the morning. So simple.

These are just like the cookie time cookies =)

225g butter
3/4 C brown sugar & 3/4 C white sugar
1 t vanilla essence
2 eggs
2 1/2 C flour
1 t baking powder ,
1 C chocolate dots or buttons (I like to use a broken up block of chocolate for maximum chocolate chunks lol)

Cream butter & sugars. Add eggs & essence. Add flour & soda. Gently stir in chocolate. Drop in dessertspoonfuls on tray & bake 180C 15 mins.

Donna try this one but use 200g butter. I did and there a wee bit chewyer. Or play around with more brown suger and less white. It'll make them sort of toffee like and go chewy.
