I am away on a course tomorrow and have to take a packed lunch - with the vast majority of the deli counter off limit I need some help for sandwich fillings.
I've got cheddar cheese and pickle, what else can I take that will travel well and be ok to eat.
Lettuce, capsicum, carrot are 3 things that go in mine everyday. Guess it just depends what you like. If I put cucumber in mine I take the seeds out so it lasts longer and better.
I've used a few cans of the chop chop chicken, as soon as I'm ready I whip it open and put it on my sandwich and eat it..
It's so handy! I always have them in the cupboard now. If you were a fish fan I guess you could do the same with tuna/salmon or whatever.
I'd pre-make the salad part of the sandwich so all I had to do was the chicken part. Made it so easy! The lettuce and stuff was fine in my sandwich as I'd make it fresh in the morning and leave it in my chiller lunch bag. (pretty much no different to what I done pre-pregnancy, i just stopped adding the deli meats!)
Then for the rest of my lunch, I'd just have a yoghurt (or 2? depending on how long I was away from home) fruit, a muesli bar, maybe a muffin or some biscuits I'd baked, crackers and cheese and tomato or something, Maybe some wee chips (the kiddy packs?) Le snacks,.. Obviously not all of that in one lunch, but gives ya a idea.. Lunches haven't been that hard for me.
My best investment was a chiller lunch bag, so I don't feel guilty about eating stuff thats been sitting in a warm area or something!
I'd forgotten about chop chop chicken, thanks for that - I like the idea of that with lettuce, capsicum and grated carrot. Thanks ladies. I've got fruit and muesli bars.
