Ok at this rate my family is going to be eating Toast for dinner.........
Ive been trying to think of something ALL day!! I have a freezer full of virtually every type of meat available, but my brain will not combine it with anything to make a meal.........and make it healthy!!!!! arrgghhhh

So whats everyone else having ?? hopefully someone elses dinner appeals and i have the ingredients

We are having chicken chassuer(sp?) The maggi packet stuff, with mushrooms and onion, chucked in the casserole pot and cooked for 2 hours yummm

I do have more trouble with what to have with the meat dishes than anything..........i tend to alternate between having salad or hot vegies like mixed veg and brocolli........but that gets very boring very quickly

Weve had since sat

Sat = Spag bog
Sun = Roast chick with salad and garlic bread
Mon = chinese beef stirfry with baby spinach and mushrooms
DH said no to nachos or lasagne........ which makes it so much harder......he suggested crumbed snitzel but i cant be assed crumbing anything and dont really know what else to have with that.......

Dont have many greens left anyway, shopping tomorrow ........maybe a vegie free night..

Yum, I love chicken chassuer.

Tonight we have chicken out so either some form of curry (thai or indian) or else chicken enchiladas. I can't decide either but curry may win as it requires less veges which we're running short on today!

Last night was meatballs.

Tonight were having spag bol, tomorrow will be lamb casserole done in the slow cooker.
Friday will be butternut pumpkin stuffed with a mixture of mince and sausage meat (I buy different flavoured sausages and take off the skins) and cooked in the slow cooker too - its yum and all done in the one pot.

We had nachos last night, tonight is roast hogget, tomorrow is....not sure. Some of these chicken dishes sound good, and lamb casserole...mmmmm.

Oh, I'm about as uninspired as you for dinner, but that has a bit to do with the fact we haven't done grocerys in about a month, and haven't done a top up of veges etc since before easter...

We might end up getting chicken, and a pams butter chicken jar (the best supermarket one ever!) and having that on rice- I'll bulk it out with veges so it lasts 2 meals for us.

Tonight we are having corned silverside with roast potatoes, and courgettes cherry tomatoes, onions and silverbeet (all quickly fries together) with sweetcorn on the cob.
Last night DH made yummy quick pasta with chopped up sausages, in a sauce made out of tomatoes, cream cheese and garlic. with courgettes, capsicum and mushrooms. I made an easier version for DS the night before. Chucked some pasta on to boil, quickly fried some tomatoes, courgettes and silverbeet together. Threw them in the pasta and stirred through some tuna and half a t-spoon of cream cheese mmmmmmmm.
We had corn fritters with bacon on sunday night yum!!!
Pizza is always a favourite in our house, as is wraps with beef schnitzel or chicken and homemade tortillas (courtesy of Sophie Gray!!)
Failing all good ideas and motivation, we throw the kids in the car and head to the beach. Grab $4 chips from the takeaways across the road and have a picnic!!!

Im not a fan of chicken chasseur, neither is DH, but tomorrow i think im gonna put on the crockpot and make apricot chicken..............my fav, even tho DH isnt a fan he can just suck it up

Rach - you guys sound so creative!! nice

my DH can be a bit painful to work around, theres so many things hes not overly fussed on but he just had to get over it

I copied food in a min with putting the tortillas in a muffin tray and making little cones out of them then filled them up with mince, melted cheese sour cream lettuce and tomato. .........they were great and so easy to do.......

I tried something new the other night Kelly, and DH loved them (says something, he's extremely fussy). Dipped them in flour, then an egg & milk mixture, then into crushed cornflakes with a bit of paprika, and baked in the oven at 190 till they were ready....delicious!!!

Kelly what about chicken fettucini? you can get a good recipe off the good morning website

smoked chicken fettuccine

Shopping
Oil
4 rashers of bacon
300g smoked chicken breast
1 onion, chopped
2 cloves garlic, crushed
400g fresh pasta
375ml fresh cream
Parmesan cheese to taste
Salt and pepper to taste
Fresh herbs to taste (parsley, basil). Optional.

Method
- Fill the kettle and boil the water. Put in a pot of water to boil the pasta. Do this 2 times. This will speed up the cooking time.
- Fry bacon in oil until crispy, remove from pan.
- Fry onion, garlic and chicken in same pan (adding extra oil) as bacon and fry until cooked.
- In a small bowl combine cream, parmesan, salt, pepper and herbs.
- When water is boiling, cook pasta until al dente - only a few moments for fresh pasts, then drain and return to the pot it was cooked in.
- Add all other ingredients (bacon, chicken mixture and cream mixture) and stir well.

If you take Kate recipe and create a little pocket in the chicken breasts and stuff with butter and some crushed garlic - then dip them in the egg and flour mixture.
I cut potatoes into wedges and cook them at the same time - home made wedges and chicken kievs better than KFC

I always have the thai curry pastes in the fridge and plenty of cans of lite evaporated coconut flavoured milk, quick, easy curry that's not too bad for you!

Made a chicken pie with leftover chicken on Sunday - use a can of watties extra special country chicken soup, veges, chicken, all encased in flakey pastry, YUM!!!

Last night was mutton knuckles done in the crockpot with tomato paste, water, onions, and macaroni & peas added at for the last hour.

Tonight is pizza, was meant to be steak but I took it out of the freezer too late so it's still only half defrosted.

Another chicken fave is tex mex chicken wraps ala Annabelle Langbein - easy combination of chicken, kidney beans, tomato paste and sweet chilli sauce to make a great filling for tortillas. Can make into burritos, or enchilada's.
