Wondering if anyone knows how to make a gluten-free version of the lactation cookies?
Want to make some for a friend. She is not coeliac, so the oats are ok, but needs to reduce gluten in her diet. Obviously I need to sub out the flour.
Anyone done this before?
OR - does anyone have a yummy cookie recipe that could be modified? I guess adding the brewers yeast could be done to pretty much any cookie.

My sister is wheat-free and generally just subs rice flour for wheat flour in cookie recipes.
I've been making wheat/dairy free peanut butter and choc chip cookies recently and adding LSA and brewers yeast to the mixture. I think the LSA improves the texture as rice flour makes biscuits quite crumbly once they're cooked.

most supermarkets have a gluten free section - look there and you should see something called "simple baking mix" (you can get bread mix cake mix etc, you want baking mix) which is a combo of all gluten free flours. Its in a green bag. Just use instead of regular flour in whatever recipe you have

Yep, I have made a big batch of these recently.
I tend to use a mix of potato starch and rice flour when subbing for regular flour, however I am a newbie in this whole wheat free business and tend to fly by the seat of my pants.
They tasted pretty good though, and I've given them to other people to try and they've been pleasantly surprised too.

Cool! Thanks. Have got some gluten free flour today that has guar gum in it, so hopefully it works.
On the box it says "make adjustments to gluten free cooking" - which I don't really understand but, like MamaT, I'm just gonna try flying by the seat of my pants!!

My sister does actually have Coeliac so have to be very careful. Does anybody know if brewer's yeast is gluten free?

I've had huge success baking with the Organ Plain flour. Even made lovely light cupcakes :)

I second the orgran flour, I use it in all my baking - including lactation cookies, its brilliant & makes great biscuits (without needing to add gaur gum)

Im going to try these with Brown rice flour and a little guar gum. Coeliacs should not eat oats they are not seen as gluten free in NZ . I figured the oats are probably for protein so im going to try using quinoa flakes instead which are high in protein also.

The lactation boosting ingredients are the oats (beta glucan in the cell walls, also found in barley) brewers yeast (similar ingredient) and flax/linseed (if included). Quinoa and millet are also lactation boosting ingredients.

I tried making lactation cookies with rice flour in place of wheat flour it didn't work you need the gluten to bind them together.
There must be some alternative that will allow this to happen not sure what it is though.

You need to add guar gum or xanthan gum when using gluten free flours , sticks it all together

A mix of flours works better than just one. I used to mix rice flour, potato flour and one other (I used buckwheat, but I was wheat free not gluten free).
And totally agree with kiwi girl, you need the guar or xantham gum

latest research shows oats only get gluten via paddock / factory contamination. Harroways Oats produced in Dunedin are not cross contaminated. Hospital Dietician gave me this information. Harroways havent got the Coeliac society endorsment yet. im just wondering about the brewers yeast too, guna give binn inn a ring soon
Ive been eating harroways with no effects on my system im GF Coeliac

I was told not to eat pats as the protien in them is almost the same as gluten but not exactly and there hasnt been enough research done . It may be safe and maybe not . So I just stay away as its the long term im worried about .

I was told not to eat oats by my dietition, gp , and grandmother who has had coeliac for over 20 years, they are not on th safe list in nz as there is not enough known about the effects from the oat protein on coeliacs. As its not exactly the same as gluten but very very close, better safe than sorry.
