Topic: Help - lunches for work Posted: 20 November 2008 at 1:18pm |
I have forgotten what I used to do when I was pg with Jack. I am only working Fridays so most of the week is easy but I am not sure what to do tomorrow.
At the moment I am enjoying couscous with avo, tomato and fresh pineapple. Do you think it would be ok to prepare tomorrow morning and take to work (we have a fridge obviously)? Or could I cook the couscous in the morning and then just cut up the tom, avo and pineapple at lunchtime?
Any other ideas for quick and easy lunches at work?

I'm sure that would be fine. It's ok if the food is kept chilled and stored properly but the fruit might go soggy if you do it the night before.
You're way more adventurous than me, all I've managed is the odd salad roll lol.

I always take sandwiches made fresh in the morning, but have started taking whole tomatoes with me lately and cutting them up fresh at lunch time - it seems to taste so much better!

Couscous is a great idea - had it for dinner last night and wasn't sure if leftovers would be ok today? Stored it in the fridge, and it does have veges and herbs in it so decided to play it safe and left it at home, then went to the supermarket for lunch... was having one of those grumpy days where all the foods I wanted were off limits, and all the foods I could have I'm sick of and couldn't bear the thought of them! Ended up having a total tanty and settling on 2 minute noodles - total lack of nutririon and not even that good!!
But have been finding that cheese and tomato sandwiches are generally hitting the spot... or ordering toasted sandwiches - yummy!

I used to make couscous at work in a mug. Just half a cup of kettle boiled water (if your work allows tea and coffe), and half a cup of couscous- cover with a small plate or another mug, and leave for a few mins. Fresh! Even better if you pop half a teaspoon of miso in it too yum!
I can tell you a recipe for choc cake in a mug too if you like??!!! just need a microwave.
Im really into cheese and Pinapple sammies at the mo... yum!
Another good lunch is apple, celery, nuts (almonds/walnuts/etc), greek yoghurt all mixed in a bowl... it can be compiled easily at work too. Prob need a few carbs though somewhere too.
OR- small can of tuna- really good w couscous... or great with 2 min noodles!!! (eek)

Cottage and cream cheeses are ok if they're bought in sealed containers and eaten within 2 days (so just buy small ones). Today I am having verkerks toast (kind of like vogels) with cream cheese and sliced tomato. So yummy!

I think the choc cake in a mug recipe was posted under recipes a couple of weeks back?
Yep I'd go with it - the thing with prepared salads is that if you prepare them yourself, they are likely to be safer and you will know whether you have taken all the right precautions etc.

Very excited about this choc cake in a mug idea... here is the recipe in case anyone has trouble finding it
Baked potato in the microwave with stuff on top (tomato, cheese, baked beans, whatever) is great for lunch, other than that I was having HEAPS of toasted sandwiches about a month ago...now I usually get home for lunch and cook myself some pasta or something. Mmm need to get some couscous though, haven't had it for probably a couple of years (not sure why not?!) but it's so yum.

Cake in a Mug with pics
I reakon you could get pretty creative with it too.
to self sauce you can just sprinkle brown sugar and cocoa on top and some water..... Warning though, untried... thats mere theory lol
