Chicken nuggets (or chicken hiding as it's called in our house) made with mayo and crumbed rice bubbles & Parmesan.
probably some salad and oven chips to match.

Do you have a recipe for how you do the chicken nuggets? It sounds good!

We are having homemade pizza tonight, it's a bit time consuming making the dough etc but it's one of the favourites for DH and DS so I figured I'd do it anyway despite feeling like doing a more lazy Monday dinner.
That orzo salad sounds amazing, I LOVE the foodtown magazine and get so many good, well used recipes from there

Yes, I believe the longer version of the name is 'Chicken hiding in breakfast'
-Whizz rice bubbles and a very small wedge of Parmesan together (no idea of measurements, I fill my magic bullet container with rice bubbles for 2 chopped chicken breasts  )
- Coat the chicken pieces in cornflour.
- Then coat with mayo
- Put the coating mixture in a plastic bag add the chicken to mix.
- Put in the oven at 230degrees for ~10 minutes. the objective is to cook hot and fast before they dry out.

We're boring - Spanish pork chops with a garden salad, for DS, vege mash - which he probably won't eat because he hasn't eaten anything except a piece of birthday cake in the last two days.

We had homemade pizza last night which was really yum- used really thinly sliced lamb steaks which made them go really far and tasted great :) MrsEmma, I cheat and freeze a whole pile of par baked pizza bases so I dont have to make them at the time. :)
Tonight I suspect will be toasted sammies as I'm not sure I can be bothered doing anything else! Though I do love a good toastie!

We are all having pork stirfry done in a honey soy marinade with rice! DD eats what we eat and isn't fussy... Dp on the other hand... lol!

tonights meal was boring, but the other night i made Popcorn Pork which was quite cool! bit different anyways.
was like homemade KFC  but made of pork obviously  i'm not much of a cook so was quite pleased with my efforts.
ETA i used bread crumbs instead of crackers - mostly cos i couldnt be bothered crumbing up any crackers

Since it's just me tonight it's a bowl of homemade kumara chips and aioli. Very boring but super easy!
Would you mums who make your own pizza bases mind sharing your recipes in the food / recipe section? I prefer to make my own but haven't found a recipe that I really like - mine end up too bready.

I would blessedmama but I'm a cheat and I use my bread maker to make it  So my 'time consuming' aspect is getting it out of the cupboard, chucking the ingredients in and then waiting for it to finish and rolling it out!

I tried something new tonight - individual meatloaf cupcakes with mashed potato and cheese "icing"! They worked well, except they didn't hold together terribly well.

I have a go to pesto pasta.
Just cook chicken and some onion, some angel hair pasta and chuck it all together with some pesto.
Very quick, very easy.
Usually top it with feta. DS LOVES feta
