Hopefully I am remembering correctly but last year I am sure it was Maebeebaby?? who posted the most yummo after dinner mint recipe that my family all went mad over... I have a new computer and have therefore, lost the recipe Hopefully Mae sees this, or someone else remembers if it was Mae?? cos I'd sooooo love to get that recipe again, please...

Sorry for the soooo OT post, but I thought this was the best section to post in as it's where the recipe was posted last year

Hi! Ummmmmmmmmmmm I think I need a huge kick, cause I can't find it!!!! And I so want it again! It was for a fondant - I guess we could trawl through the Charting thread but then it's a case of 'did we post it in the old one that broke or the new one'!??

Foodtown Magazine for christmas (the current issue) has some divine looking ones that look just like after dinner mints so I am going to change to those this year :)

yay I just went through about 100 pages and found it!!!!

MAEBEEBABY'S AFTER DINNER MINTS

2.5C sugar
˝ C Blue milk
˝ C Cream
2Tbsp Butter or Marge
Ľ tspn Cream or Tartar
˝ tspn flavouring (peppermint)
A few drops of green food colouring if you desire (but be really careful on this, just use 1-2mls, as it can make the mixture really runny and you don't want that!)
1-2 packets of cooking choc (Unichoc brand seems to be the one I get the most comments on!)

Put an ungreased baking pan in the fridge to cool, do not freeze.

In a heavy saucepan combine, suger, milk, cream, butter and cream of tartar. Stir until sugar is moistened. Place over high heat, bring to a boil then gradually lower in your candy thermometer (BTW, I never use one!). Cook without stirring, lowering heat slightly as mixture thickens. Cook until syrup reaches 236F (or just give a darn good boiling until it 'rolls'). Remove from heat and pour into cooled baking pan without stirring or scraping. Cool until lukewarm, work with a spatula until fondant creams then knead with hands until very smooth adding flavours (CAREFULLY!) or nuts. Form a ball and let rest until completely cool.

Then roll the balls in the melted chocolate to make your final touches to the 'MaebeeBaby After Dinner Mints'.

Remember, always take double the amount you would assume to take when taking them somewhere!
