I'm hoping someone can help me, I'm having a bit of a mind blank this morning!

I've got a friend coming for lunch today, she doesn't eat meat but does eat fish. I don't eat dairy atm. So doesn't need to be vegan but most of the vege recipes I know include dairy, so I'm at a bit of a loss!

Ideally I want something that will keep well, ie that I can make around 9am and then serve at lunch time. But something super quick to make at lunch time would also suffice!

Hmmm, maybe soup ... but it's HOT today!!

Make a quiche or frittata and just don't add milk?

oh frittata! that would work, thanks. quiche would be weird with no milk and no cheese though?

Meh I do it all the time if I start making it and then realise theres no milk or cheese in the fridge lol. I just add more egg and a little water and it comes out alright

I decided to go with grilled salmon and a salad since I was at the supermarket. Yum.
