For Babies Aged 6 months +
1/2 tbsp vegetable oil
50g leeks, washed and chopped
1 large chicken thigh on the bone (about 175g) skinned and trimmed of fat
200g carrots peeled and chopped
250ml unsalted chicken stock
50g frozen peas
Heat the oil in a pan and saute the leeks for 2 mintues.
Add the chicken and saute for another 2 minutes until sealed.
Tip in the carrots and pour over the stock. Bring to the boil, cover and simmer for about 20 minutes.
Add the peas and cook uncovered for 4 to 5 minues.
Remove the chicken with a slotted spoon and take the flesh off the bone.
Blend the chicken and vegetables in a food processor with as much cooking liquid as necessary to make the right consistency for your baby.
Yes it can be frozen. I can't remember what I did for Zac - I think I just tried leeks first time in this recipe as he had already tried everything else in it.
