Okay I have done some research (google is my friend) and it would appear I was wrong ice crystals is a sign of freezer burn! However,

"While freezer burn is unsightly, it does not have an impact of the safety of the food, and foods which have been freezer burned can be eaten. However, it does alter the quality, and severely freezer burned food may be tasteless or have a distinctly metallic flavor."

So it might not taste the same but won't do her any harm
